Vegan buckwheat cookies

These are easy, healthy and gluten-free buckwheat cookies. It's so easy to get some extra fiber and vitamins with the buckwheat cookies. All you need is 6 simple ingredients and a maximum of 25 minutes of your day.

Ingredients
  

  • 2 cups buckwheat groats
  • 1/2 cups old-fashioned rolled oats
  • 1/2 cups sugar
  • 1/2 cups room-temperature vegan butter
  • 3/4 cups plant-based milk
  • 1/2 cups chocolate chips

Instructions
 

  • Place the buckwheat groats into a blender or coffee grinder and blend for a few minutes until they transform into flour.
  • Transfer the buckwheat flour into a big bowl and add the oats and sugar. Stir until combined.
  • Add in the butter, plant-based milk and chocolate chips. Mix again.
  • Refrigerate the batter if it is too sticky for 1 hour.
  • Preheat the oven to 175 C / 350 F.
  • Afterward, with your hands, take 1-2 tbsp of dough and form a cookie shape. The cookies will not spread, so you can place them in the tray with a relatively small distance between them (watch the video tutorial below for a better understanding).
  • Bake for 12-15 minutes (not longer!) at 175 C / 350 F.
  • When they are done, let them cool for 10 minutes (VIDEO BELOW)
