Vegan Apple Oatmeal Cookies

A simple, easy, and filling recipe of these vegan apple oatmeal cookies. They are healthy, with no refined sugar, gluten-free, and dairy-free.
The apple oatmeal cookies are not only healthy but also delicious: they are moist and perfectly sweet!

Ingredients
  

  • 2 cups old-fashioned rolled oats
  • 3 tbsp chickpea flour (or almond, buckwheat flour/all-purpose flour work fine as well of not gluten-free)
  • 3 tbsp syrup (maple syrup, agave syrup, date syrup, or honey)
  • 1 mashed banana (the riper, the better)
  • 3 tbsp peanut butter
  • 1 tsp baking powder
  • small chunks of 1/2 apple

Instructions
 

  • Firstly, take half of the oats (1 cup) and blend it into flour (this will help the cookies to hold better together)
  • Transfer the flour into a mixing bowl. Then, add the rest of the ingredients: unblended oats, chickpea flour, syrup, mashed banana, peanut butter, baking powder, and apple chunks.
  • Mix with a spatula/spoon until well combined.
  • Take some cookie batter with a spoon, and form a cookie shape on a baking tray using 2 spoons (watch the video tutorial below).
  • In a preheated to 175 C/ 350 F oven, bake the cookies for about 12 minutes.
  • Place the cookies on a cooling rack, and let them rest for 10 minutes. Enjoy!

Notes

  • Feel free to add some nuts (1/4 cups) into the batter if you wish (walnuts work very well)
