No-bake energy bites

Try these easy, vegan no-bake energy balls for your sweet cravings. Only 4 ingredients, 15 minutes and done!

Ingredients
  

  • 1 3/4 cups dates
  • 1/2 cups cacao powder
  • 3/4 cups walnuts
  • 1/2 tsp salt

Optional

  • 1 tbsp coconut oil/maple syrup

For decoration

  • coconut flakes
  • finely chopped walnuts
  • melted chocolate

Instructions
 

  • Place your dates in hot water and let them sit for about 30 minutes or until they are soft.
  • Finely chop the walnuts into small pieces (roughly the dimension of sunflower seeds).
  • Squeeze the water from the dates and use a semi-deep bowl to mash them until they form a puree. * (I highly recommend reading the notes below)
  • Add the cacao and chopped walnut into the mashed dates and mix until well combined.
  • Let it cool in the fridge for 30 minutes to 1 hour.
  • Take about 1 tbsp of dough and form small balls.
  • In case you want to decorate the bites, roll them in coconut flakes, walnuts, melted chocolate or a combination of these ingredients.

Notes

You can mash the dates with a blender or food processor. It's going to be easier than mashing them by hand if you have dry dates.
Use a cookie spoon, it's easier than forming a ball by hand!
